Most Flat entry doors of similar size are either 24" or 26" wide, and 72" tall. So, the entry door is probably 72" tall.

No, I think you measured correctly. The door opening is 64" and adding the bottom lip of 10" (the one you stepped over to get in) would make the top of the door opening at 72".
5'10" = 70" giving 2" clearance.

Huh?
What lip? The bottom of the door opening is flush with the floor:

If by "lip" you mean the height to the floor... no, the step up is much more than that.
The spec page says that the interior height is 6'-5"... although it's anyone's guess whether this has changed with the new mould. That's 77". If the door opening is 64" tall (from floor to top of opening), then there would be 13" from the top of the opening to the ceiling in the middle of the trailer... and that looks possible. If the door opening were 72" tall, it would only be 5" to the ceiling, and it looks like much more than that.
I think that a person normally bends forward while stepping up, and so can step up through an opening less than their own height without hitting. Getting out is another matter...

Another way to calculate is looking at the picture it appears the door top is about the same as the middle of the cabinet over the kitchen which to me is about eye level and if I am 5'8, minus 4 " from eyes to head top, results in 5'4", the number Brian calculates.
Entering is no issue for taller people, exiting however one needs to be bending over a little, helped by the new stripper pole to allow such.

nothing scientific about this visual comparison but comparing two pics of classic vs new 19 shell..it appears maybe new door has a taller cutout assuming windows are in the same place vertically. They could also be somewhat = with the question then.. is the actual door height somewhat =

Good idea! I don't know if the window heights are the same, but if they are the new door opening appears to be taller... although there's no frame in it yet.

Looking good. I see the flip up table is smaller. I also wonder if the fire extinguisher is placed permanently where it is in this photo how long it will take to be damaged by a late night kick.

The fire extinguisher is located at the door for a purpose. In the event of a fire, you can exit the the trailer and still access the fire extinguisher.
Mine has been there ( opposite side ) for eight years and I've never bumped it.
I've seen a mod where someone put it above the kitchen counter, so in the event of a oil fire in a pot, you would have to reach over the flames ( and be inside the trailer ) to reach the extinguisher. Not smart.

Is that what the new door frame looks like on the inside when finished?.... just an opinion but it looks jagged and pretty funky at this point..maybe its just the pic or some trim is missing.

I too do not like where it is installed and would move it . Ours is installed inside the door ,to the right of door ,off the floor at corner of dinette , out of the way , no problem to get to it . Pat

That would be me, in the old style it was located over by the dinette and I moved it over by the kitchen. I think next it will be down low on the door trim near where it is now but more out of the way.
