When we were working on our build sheet with Sarah, I mentioned I didn't want that cover and she said they have to put it on for safety reasons, but it was easily removed. Heck, it might be required by the mfgr due to some idiot doing something stupid and then suing the mfgr.
I didn't want to pay for a stove cove that I wouldn't use and didn't want extra unused holes in my formica. Was OK with ETI.
Will be building a HDPE cutting board stove cover and probably some kind of metallic back splash to protect from heat. Want something higher than the standard ETI installation.... maybe stainless. Very much liked Sara's copper there.
As far as I know a stove cover is not required.
