If we are attending both the Saturday dinner pot luck and the Sunday breakfast pot luck should we bring something to both events?

We won't make it this year, but yeah - that's how pot lucks work. If every attendee brings a dish, there's more than enough food for all.
I remember the first time we attended Matagorda. There were way more attendees than dishes brought. As one of the last couples to go through the line, we found slim pickings to say the least.

Yes, if everyone brings plenty each time and eats in moderation...  at least the first time through the line, there should be enough for those at the end of the line. Must remember it is not an "all you can eat buffet restaurant" where you are making sure you are getting your money worth... and have saved up a large appetite just waiting for the event!
