Thank you Tammy and Reace for the great Rally. Both Deb and I enjoyed meeting other owners, great food, great people. After spending 10 nights in our 19ft we really enjoy it. The trailer passed the wind test at Vantage Washington where the wind was blowing 45 to 55 mph overnight. The next day the wind was still blowing when we left. The trailer did very well in the head wind heading West to Ellensburg, Wa then South to Yakima with a side wind. The trailer passed the wind test in my book.

IAN’S BLUEBERRY PANCAKES

1 CUP WHOLEWHEAT FLOUR
1 TABLESPOON BROWN OR RAW SUGAR
2 TEASPOONS BAKING POWDER
¼ TEASPOON SALT
2 FREE RUN EGGS
¾ CUP MILK, SOY MILK OR RICE MILK
2 TABLESPOONS FLAX
1 TABLESPOON FINELY CHOPPED WALNUTS (OPTIONAL)
½ CUP FRESH OR FROZEN BLUEBERRIES, MORE IF YOU LIKE

BLEND ALL DRY PRODUCTS IN LARGE MIXING BOWL
MIX EGGS AND MILK
ADD MILK/EGG MIX TO DRY MIX
STIR UNTIL ALL BLENDED
ADD BLUEBERRIES AND STIR
ADD ADDITIONAL MILK UNTIL MIX SCOOPS EASILY AND POURS ONTO GRIDDLE
POUR ¼ CUP OF MIX ONTO HOT BUTTERED GRIDDLE
FLIP PANCAKES WHEN BUBBLES APPEAR
COOK UNTIL BOTTOM JUST BROWN (ABOUT 2 MINUTES)
SERVE WITH MAPLE SYRUP AND BUTTER
