Hate to bring this up, but I presume this is not a self-cleaning oven?

I cut a chicken in half and roast it on low for one hour in my Weber Q. Releases quite a bit of grease.

Probably not. I have three RV propane ovens, and none of them are self-cleaning or even continuous-cleaning. With the exhaust inside and in a small space, I think self-cleaning operation would be problematic. Self-cleaning gas ovens do exist, at least for home use.

I did have to spend some time cleaning up the pan after baking a Cornish hen in my toaster oven; I prefer to bake meat in it at campgrounds that have kitchen sinks. The insides of the toaster oven didn't get dirty...
