Yes, battery switches like this are typically intended to handle engine starter current (and so the 500 amp peak rating) and large continuing load (300 amps in this case)... much more than needed in an Escape, but much better than too small!

I would like to replace the toggle switch as well. That long handle doesn't give me a lot of confidence that it won't get broken.
How about one of these flush mounted? The reviews seem to indicate that it is prone to failure but I don't see how.

That's correct, the top is how mine's mounted but mine's the two battery one.
There's also the option of having one with a removable knob, I guess as a security feature, although I'm not sure how useful that would be as it would be so easy to bypass it. Also, for those who don't like protruding switches, the knob would be almost impossible to break or accidentally turn on or off.

For comparison, the maximum output of the converter (which is the maximum battery charging current that could ever go through the shutoff switch) is only 55 amps. While current from the battery to the fuse panel could be higher than 55 amps, it's unlikely unless someone has abnormally high 12 V DC requirements. Note: the built-in inverter is wired to the battery directly, not going through the shutoff switch in a normal Escape installation.

My Blue Seas has "1" "all" "2" and of course "off"
The only time that I use "all" is when I'm microwaving.

Wired up the new battery, 12V, lights and fan are working so I assume I did it right. Charging it now! Thanks everyone who gave me advice (some of which I heeded).

Blue Sea makes several marine battery switches that look similar. One switch, for two engine start circuits, is the off-1-2-both switch. Another is a double switch that turns on 2 poles without crossover connection, this can be used for 2 separate hot(+) connections or (+)And (-) connection on one circuit. A single pole disconnect switch is appropriate for most RV single circuit applications. These switches all look similar.
There are also different sizes available for higher amp ranges.
A battery maintenance charger should be used to extend battery life and batteries should be disconnected for extended inactive periods.
