Can't help with the full time mattress, but you do need to bypass the water heater ( or fill it with 6 gallons of antifreeze ).

I must have really bad taste buds as I use RV antifreeze each winter. In the spring, after I get the system sanitized with bleach and double rinsed to get out the bleach taste out, I have never tasted a hint of the antifreeze. I even pump it from the fresh water tank to makes sure the pump gets it and that is supposed to be the horror of all horrors. Must be all that spicy food.

Just thinking, I would have to have a shot of RV antifreeze so I know what it tastes like...

We are not all brewers and have your fastidiousness.

I will have to show that to Mary, I don't think fastidiousness is a description she would use with me!

It is a matter of time on hand too. This is a method I used to use on my previous stick trailer. In the 6 years of owning my 19, I have only had to bleach once to clear up any taste, and that was when it was new. Drying the lines out for the winter seems to leave them nice and clean, as we have had no bad taste arise yet.

I sanitize with bleach every fall and spring. I don't want that black moldy looking stuff I have found before in plastic bike water bottles and bladder tubes growing in my fresh water tank or lines. In between trips I used some peroxide based homebrewing sanitizer that doesnt need any rinsing. I think home brewing gets one attached to sanitizing unless you want some nasty tasting beer

Maybe it has to do with your local water. I have never had issues with anything to do with our tap water here.
