Welcome Erie (and hubby),
Don't worry, you're technically not amateurs. A trailer is really just a tent on wheels that doesn't have to be "erected" at each new location (although it does have to be set up), it can be put away wet, and is much more comfortable for the most part. You are going to love the Escape. It will probably be several trips or a few weeks of an extended trip until you get a handle on things. It basically comes down to organizing things in a manner that works best for the two of you, and determining what equipment and accessories are essential for your style of camping. Even though my wife and I have been RVing for many years, it seems we are still tweaking things. And I suspect many of the "pros" here would tell you the same thing. We continue to evolve, so to speak.

I saw that one before Mary, but didn't really find it useful. It's highly specialized for a certain trailer - not an Escape. Of course, some of the steps are universal.

I think any list is only a starting point, because even between two trailers of the same make and model there are difference in equipment and personal camping styles.

There are even apps which let you select which items are applicable and save the list for repeated use. I've never made a formal list but I like Baglo's approach - it sees like a more appropriate level of technology, unless you really want to keep track of observations made during the checkout.

I've been using List Master on my phone for "Pre Flight", "Breaking Camp", clothes, food, etc. and it's saved me more than once . I check off each item then at the end of the trip return them to their original order.

Biting apples works when that happens.

Time to get one that stays in the trailer.

I have an extensive Excel file that lists every, and all, items I might bring. I have shared it here a couple times already, so won't litter this thread with it again.

The nice thing is that before I print it off, I just delete the items I don't care to take that particular trip, then after printing, just don't bother to save. I also keep a couple backups about too.

Yes, although I don't get specific with some items such as food.
