Did I say I waited to the last minute?
Thanks for all of you who answered my questions thoughtfully. Brought all responses to the big guns, Sid, and here’s what we came up with.

Final Build Sheet.

3 Burner Stove
External Fridge Fan
2 Way hot water tank
Foot Flush Toilet
Winterizing T Valve
Toilet Shut Off Valve
Exterior Shower Passenger Side

2 External 12v, One on each side to ck Tire Pressure
1 Interior 12v outlet by Dinette on Fridge wall and TV Cable Ready
1 Interior 12v usb in dinette by outlet #2
1 Interior 120v end of kitchen to left of cabinet extension
Dual 6 Batteries
160 watt solar panel with charge controller
1 Additional Exterior LED, Front above Storage Box
1 Additional switch at door for front and drivers side lights
Amber lens on Porch Light
Led Awning Light Strip
AC with Digital Thermostat
MaxxFan Upgrade with Remote
TV Cable ready with 120 outlet above night stand
Additional cable ready at dinette on fridge wall
Extra Insulation and Frameless Windows
Opening Window (Frameless) in Bathroom
Power Tongue Jack
Aluminum Rim Package
Exterior Access Hatch rear drivers side
3 counter extensions (2 dinette, 1 kitchen)
Exterior Propane quick release with 12’ hose and adapter
Additional cabinet door under bed
Storage Box
Custom Flooring
Custom Formica
Custom Fabric

Customer supplied solar port (Just in case we ever need a solar suitcase)
2 Horst Probes (Helps the readings on the tanks)
1 Additional sewage Tube holder (To store Fishing Poles)

2 Filled propane Tanks

Battle Ship Gray with the black belly band. Lots of decisions were hard to make. We splurged on a few things, but I know it will be worth it. Now to focus on "All the places we will go and the nice folks we'll meet along the way

We bought a 2016 Casita Independence and sold it 6 months later after seeing Escapes at The Bluebonnet Rally. Sold the Independence quickly and have lots of "Stuff" from the Casita packed and ready.

So feel pretty confident to have necessities till we get back home.

I'll be exploring the forum for mods I'm sure!
