BBQs and Grills

Regional language uses are interesting, too. For you Texans, or maybe it's all of America, what's the difference between a barbeque and a grill? You are differentiating between the two in your comment so I take it there is a difference. For us in Canada, at least where I come from, the terms are used interchangeably.

Get ready: I see a barbecue education coming!

When referring to the open-grill cooking appliance in these forums I've started saying "grill" instead of "barbecue", to avoid confusion.

A grill cooks by direct heat, with the flame under the food.
A BBQ cooks the food indirectly. For instance on my Weber I have four burners and a smoker burner. To BBQ, the food ( ribs or a pork shoulder for instance ) goes on the right side with those three burners turned off. I light the smoker burner ( under the box containing wood chips ) and one burner on the left side.
Cook with 225 F heat for hours and hours.
So, mine is a compromise. A grill or a BBQ.
Most of what you see in the stores are grills, not proper BBQs.

Aren't pits holes dug into the ground? Those would be BBQ grills to me.

Call it what you will..."Grillin' & Chillin' in Dillon"...makes for better ad copy! I just wish I had taken more pics of all the other barbecue equipment lined up at this event.

A "pit" as we call it, is another name for a BBQ. The meat chamber/smoke chamber is offset from the heat source. The pit at one of the BBQ joints here in South Texas is over 100 years old, made of glazed bricks.

We never call a grill a BBQ or a BBQ a grill, but to each his own.
