Even if I got the standard sink, I believe I would have done the same. I don't think there's any such thing as too much counter space in these trailers. I have ZERO regrets that I made this decision. YMMV
As usual Donna D..... I'm with you.

I keep a box of Kleenex, and a open topped narrow plastic bin behind the 2 burner stove (in the original orientation). I use the bin for fruit, a couple of koozies, (I remove both the few times a year I cook inside). Turning the stove would give me a bit more counter space, however I'd lose the space behind the stove. Since it is fairly close to the sink & refrigerator (well, in a 17, everything is) I use the top of the closet for most of my countertop type prep.

Does anyone know if the flip up table on the kitchen end in the 19' Escape flush to the counter top or below the counter top?

Yep, flush. We leave it deployed alot of the time, and we find we can still go in and out the door no problem.

Some photos here and in other threads appear to show a slide-in range with both cook top and small oven. Am I seeing that right? If so, what brand/model is that and how is having an oven working out for those that have/use it?

Escape offers an oven option, it is a 3 burner Atwood, piezo stove burners but manual oven. Great if you camp without hook ups. I never used my oven.....it stored my pans though.

Yes, if you get the oven, the oven and stovetop are this slide-in range. It appears to be the Atwood model RV-1735 BBP. This is the Wedgewood series, and the "BBP" is Atwood's code for a manual piezo ignition for the stove burners, and match lighting of the pilot for the oven. There is a RV-2135 BBP, as well, but I don't think any Escape get it; they are the same except height (the "17" and "21" in the range model is the overall height, in inches).
