Crappy weather, gray skies, and rain anyway...

We don't dare plant anything for a vegetable garden until Memorial Day... fresh plants or starts would drown...

I'm surprised that things are growing well here- we've had very little sun and lots and lots and lots and lots of rain. But I'll sure enjoy seeing it green up even if it doesn't get sunnier until April (I'm not willing to wait until May!)

Rhubarb Custard Pie!!!

From Women of Unifarm Cook Book.
Adapted for the microwave by Alf.
In a micro proof bowl combine
2 cups rhubarb (1" pieces)
2 tbsp flour or corn starch
2 egg yolks
1 cup sugar
1 tbsp butter.
Cook about 6 min. on Hi, stiring often until thickened. Filling will set more as it cools.
Pour into a pre baked, cooled pie shell and when filling is set top with meringue and bake at 375*F until golden.

Where is the microwave part? (Cooking in microwave?) still says bake. (I've never cooked the custard for rhubarb custard pie, just poured it in and baked. Or is it just the meringue that you bake (which I'd skip anyway as I don't like meringue?)

Hi: Bobbie54... Sorry. You only bake the pie shell then the meringue part. The filling is cooked in the microwave. Alf

Once again Baglo is out in front There's hope for mine but it's obviously a couple of weeks behind.

Nice recipe but my favorite is still rhubarb-strawberry.

Are you forgetting the Saskatoon berries??

Rhubarb without Saskatoon berries in the pie? (Serviceberries to those in the states). Sad.
Saskatoon Rhubarb Pie Recipes | Food Network Canada. Here's mine in bloom right now. And we may see the sun by next month if we're lucky.

Trying again- the rhubarb test. But rhubarb likes rain a lot more than I do when camping.

Yes when you live on the west coast you get a lot of rain. But you also get a lot of rhubarb.
