Victron's docs say to mount their controllers on a non-flammable surface. That leaves plywood out. What would be a suitable substrate for mounting their controller?

What about a piece of steel flashing between the controller and whatever, as a backer of sorts?

This is not true, at least for the recent models. It is as secure as any other device that uses Bluetooth with a 6 digit pin. I have the BMV-712 and while many may not bother to change the pin, the option is there. I'm not going to argue that Bluetooth is top shelf security, but I would not characterize the device as completely insecure either.
