Yes, wherever there is white vinyl there is 3/8" foam as this is how the material is made. There is only something extra behind it if the extra insulation option is elected.

I was one who always used portable with the 19, and decided to add some fixed on the 5.0TA. Real glad I did, as the convenience is wonderful. It also keeps the batteries topped up when stored without any need to plug in. I don't buy into the worry of a portable being stolen, I doubt that would happen, and I imagine in winter months with low sun, or lots of shade from trees or cloud, combined with lots of draw from the furnace fan, I may still be using my portable to keep things up and running good.

Yes, it covers the exposed walls and ceiling, in every Escape (as standard equipment). After all, there isn't really a distinct break between walls and ceiling, so it's not surprising that the same stuff covers both in a continuous sheet, and that stuff includes both the vinyl surface and the foam backing, so you don't get one without the other.
It's the stuff behind that foam-back vinyl headliner that varies between years, between models, and with option choice.

I was surprised by that value, but that is what ETI says on their Points to Ponder page:

There's no chance that this material has an insulation value of R-5. Perhaps that's the value for the fiberglass, foam, vinyl face together, although even that seems optimistic. R-2 would be a more likely value for just the foam.

Agreed. Not as bad as Scamp claiming R-15 with a single layer of Reflectix! It took me 2" of polyiso to get R-10 under the floor.
