LOL, nice food/oven report Dave. I guess you're enjoying the new 21.
Your oven had such a nice trim kit that I got to wondering if they sold trim kits similar to that for microwaves. The ETI install under the stove in our 19 has a good bit of open space and not really trimmed out. Lo and behold, there are all kinds of trim kits for all kinds of microwaves. Range from about $60 to $300. I may see if I can find a trim kit that will fit. Although not your nice Pizza-Cookie convection/micro the trim kit may make appear more like it.

Very true on using the BBQ to bake with, I have always promoted that, even with my wife, who's reaction was "Fine then, you do all the baking". Thus the installation of a range, where she prefers to bake.

If this company doesn't have one stock that will work they can make one custom based on your dimensions:

There's a fairly large gap around the microwave in Ten Forward. The only time I see it, is if I'm standing right in front of it. Move away 6" and it's not noticeable at all (YMMV). Nice thing about choice, modding and tinkering. Do what makes you happy!

From a strictly baking / cooking standpoint does the convection / microwave have any advantages over the standard gas oven & microwave that Escape offers ? . This is not a criticism of the OP's choice , I am just trying to compare cost versus functionality.
I must admit the convection microwave in the pictures looks like it was designed to be there but so does the factory oven and microwave.

I would think they both offer similar results, but the advantage of the convection microwave would be that it's both an oven, and a microwave. So, you don't need both, and there's more space for storage. Disadvantage of course is the need for hookups.

That's exactly what we'd like to do! We thought of having it installed where the normal oven would go but I like the idea of cooking near the door.
Where is the sink now?

Hi: BluebirdHazel... Looks like they'll be using paper plates, but they can be used to start a campfire with, if not to soggy!!! Alf

Thank you for the welcome and the invitation, escape artist. Our lives are upside down right now because we're totally changing our lifestyle so we can't commit to a reservation.

After a year of full time RVing, we're buying a tiny heritage home for a home base, selling our Winnebago Navion, Prius, and Tow dolly, buying an Escape and a Toyota Highlander! Craziness! Our heads are spinning!!!

We moved the sink to the other end of the counter. Two reasons for that, first the convection microwave fit better on the door side of the counter. Second, by putting the recessed cooktop by the door it gave us counter space to set stuff on when we come in the door rather than setting our cel phones/wallets/purses/6 packs in the sink. Linda keeps a placemat on the glass cooktop so it really does turn into extended counter space.

Hi: BluebirdHazel...You're doing ok as long as it's not just your wheels that are spinning. We now know H46Driver has a sink as well as the drop in range top, combo oven, and lots of counter space. There's never enough counter space!!! Alf

We want a convection microwave too. Chad at O'Connor in Chilliwack quoted us $547 for a 1.2 cubic feet. Is that what you paid for yours?
