We have used our 2013 Escape 19 for about 35 nights, most of those with 4 of us in the trailer with the bunk in use. Both my 12 yr old daughter and my 17 yr old 6'-4" tall son have used it and both sleep well on it. The bunk is rated by Escape for up to 200 lb, which seems about right given its construction. Although I have heard unofficially that Escape have tested it to much higher loads.
The bunk consists of two metal (pipe) poles extending across the width of the dinette area with a non- stretching piece of canvas like fabric threaded between the poles. Each pole breaks down into two pieces for storage. It takes about 2-5 min to set up the bunk or take it down. Brackets need to be fiberglassed to the walls of the trailer during construction to support the bunk. So you would have to decide when ordering the trailer whether you want the bunk. I understand that some have had the brackets installed but didn't get the bunk, just in case they wished to add it later. When the bunk is down the brackets are fairly unobtrusive and do not normally pose a hazard for bumping your heads. You could probably bump your head on the bracket if you really tried.
Our kids have slept with their bedding directly on the canvas, however, you could easily bring along a foam pad for additional comfort.
