Alternative Uses of Range Hood Space
We are working on our build list for our Escape 19 and we are planning to eliminate the range hood.
In addition to an LED light above the stove, has anyone built storage (for cups? spices?) under the overhead cabinet?

Spices should be kept in a cool dark place. You can find lots of ideas for displaying and storing spices, but most of those ideas fail the first test which is proper storage. I find that spices in the trailer age out ( like tires ) long before they are used up.
In our 17B, the cupboard above the range ( and range hood ) is where we keep plates, cups etc.

The space above the stove gets extremely hot, without the hood things will get even warmer, may not be the best place for things?

Use of the range hood for cooking ventilation is the best option.

I agree that this is not the best storage space for spices... or any kind of food. It is relatively wide and shallow in height, meaning that it might be a good place for a shelf for cutting boards, trays, and similarly shaped items that are hard to fit elsewhere.
I like Doug's shelf; in addition to being nicely made, it is short front-to-back which keeps it out of the way when standing over the stove.

I think the four-bar linkage on each side should be available as stock hardware, but I couldn't find one at Lee Valley in a quick search.

Of course, any items placed where the range hood goes will eventually get all gummed up from moisture and grease from using the stove top. Without the hood, the upper cabinets will also get steamed and smoked and covered with grease over time. After all, there is a good reason why range hoods are used above cooktops. If it was my trailer, I would keep the range hood (and I did ).

I would think that if you run the Maxx Fan when cooking, and you clean/degrease above the cooktop more frequently, this won't be a problem.

I chose to eliminate the hood for visual reasons and am glad I did. After over fifty nights in the trailer, I have yet to see any moisture and grease damage. I guess it depends on how one cooks. And the OP has made the decision and is simply asking for suggestions on what to put in its place. The knife block is a great idea--wish I had one. I have rarely used the light over the range top as there are so many lights in there already--almost more than one needs.

I think this magnetic knife holder is the only thing I've installed that required screws. I used double sided tape, but the holder itself had two screws so I had to use them or the holder would fall apart.
Compact and cost about $20. I have another unused one from IKEA in the side shed. It was too large for the space.

In ours ETI installed a 3rd light. We removed the center one and put up a paper towel rack. Being the middle position it is not over the stove. No issues with the missing light.
