Yes, I love my scrapple and you do need a low flame to get it crispy. I use a cast iron skillet and cook it for at least 15 minutes.

As to simmering, I recently purchased a Camp Chef Everest. The posts said that simmering was a problem and several comments recommended using a heat diffuser. I've tried out the new stove once and did need to use the heat diffuser to keep from burning salmon. It might work for keeping things at a simmer, also. I got the HIC Heat Diffuser Simmer Plate, 8.25" from Amazon.

Yes, I think its the same one installed in Ian's custom Boler named "Buttercup". The photos are on his website, Proud Canadian
It'd be pretty hard to lug around as a camp stove, but it works nicely in his case as a built-in.

I don't, but a neighbor built one into a home-built van conversion. There are two or three common brands of essentially the same thing, including Coleman. A feature of the Camp Chef version that may be an advantage is the availability of a propane fitting that should allow it to be used with a low-pressure propane port.

Our first Camp Chef- love it, works on the quick connect(with the inexpensive adapter) but don't always take it along. The cover is a good investment as it makes it easier to move around. Oven works great as do the burners.

I purchased a Camp Chef Ranger ll at Cabela's in Kalispell last month for 122.00 US$. So far it has performed beyond my expectations. Easy to hook up to my 19's low pressure outlet. It boils water in the tea kettle roughly twice as fast as the inside stove plus it has built in igniters. Flame adjustability is good from a full boil down to a slow simmer. No problems with wind yet.

Thanks for chiming in. Sounds good to me. I have heard in a few reviews that wind is not an issue. Having an igniter is definitely a handy thing. Fortunately, our SMEV stove inside does have them.

A SMEV stove is what some people may be interested in who have trouble lighting the standard Escape stoves.

Yes I mounted one permanently in my Boler
The stove works great, although the oven also works as designed it is not thermostatically controlled so you need to constantly monitor the temperature while cooking with it

No different than baking in my BBQ, I have to watch the temps. This requires close monitoring with a glass of wine in hand.

Just so everyone who may be interested in a Camp Chef Ranger II knows, Walmart sells them online for @ $92 (US) plus applicable tax depending upon what your location is, with free shipping. I do not know if this applies to Walmart Canada, however.

Unfortunately Walmart.com will not ship to Canada, and Walmart.ca does not carry it. Amazon.ca does, but it is stupidly priced, I could have it shipped from REI or Bass Pro cheaper.

Did a little browsing of the Calgary area stores online Jim. Sheesh! You're right about the prices.
But, you get to live in a pretty nice place, so I guess it evens out.

Yeah, it isn't uncommon for us to either not get lots of product up here, or have to pay a much higher price. This is not the case with everything, but it is for a lot of consumer products.
We definitely do live in a nice place, with a veritable playground between here and the Pacific.

I went and had a close look at the Camp Chef Explorer today. Great looking unit, well built and solid, but it is a bit heavy, and takes up a lot of room. I would have nowhere to store it, unless I was to get a storage box put on the tongue. I won't put any campsite gear in the tow either, as everything to set up camp must be in the trailer. Much easier to use whatever vehicle that way, and it never gets unpacked.
