I travel with knives handy.
I've only had one come off in travel, and that is on lots of washboard and hitting the occasional pothole.
I expect it would depend on the strength of the magnets in your holder.

Lisa bought one of these Knife Docks a while ago for home. It works great, keeps the knives for dulling, and allows for quite a few knives to be stored. We will be considering it for the trailer too.

There is a really good thread here on kitchen packing, but it is getting lost in the other comments unrelated. I'd like to request the site admin split the moderator discussion comments in to their own thread if that would be possible. Much appreciated in advance if you can make that happen. Knowing me, I'd be scraping my hands on the tips of the knives. At home I have some Analon knives that they used to make with a rubber/silicone/heck if I know on the grip and a cover that easily slides on and off. Easy to stash in the drawer and still be protected. Unfortunately their current knives are a bit different. they still have the protective sheath, but not the nifty grip.

Plus, I'm super paranoid and will always think someone will grab a knife and do me in. As if they couldn't root around the drawers and find a knife. But out on display like that - yeah, lots easier!

Laura, to answer some of your questions:
- The over door towel racks can be picked up at Home Goods, Ross, etc.
- The sink insert stays in place
- We use thin cutting boards that fit nicely next to the stove top and wall
- I keep my cooking/serving utensils in a weighted container on the counter top. (I toss the cutting boards on the bed when we travel as they slide; however, haven't lost the utensil container yet ... knock on wood.)
- Our knives are in a knife dock, in a drawer as well
- Plan on trying Alf's idea for the cutlery holder in the drawer as our current holder isn't space efficient

I was using suction hooks for hanging towels, pot holders, etc., inside but finally gave up. Now I'm using Command hooks but I'm also trying the suction holders from IKEA on a few things. (We'll see how well they work ...)

Hang on to your receipt. Although it came very close to fitting, it didn't fit my drawer as well as it fit Alf's drawer. I had to trim mine and put it inside the drawer because otherwise it rubbed the cabinet.

Towel Holder

I'm looking at this paper towel holder mounted under top cabinet by the door.
Kamenstein Perfect Tear Horizontal Paper Towel Holder - Walmart.com
This has a ratchet mechanism, so the towel roll should be able to stay in place for travel. Anyone had any experience with this holder?

Haven't used that one. We use this magnetic one, mounted on the side of the hood fan/light so it is right near the sink.
Robot Check

It holds on REALLY, REALLY tight. For travel you can just snug the paper towels up against the bottom of the cabinet OR press the sides of the holder snug against the paper towel roll. Never had it unravel or fall down.

A travel option for TP and paper towels is to squeeze the roll so that the core is oval instead of round. Keeps it from unraveling.

We have that. It mostly doesn't unroll. Maybe one sheet worth.

We use a paper clip on the toilet paper roll. (and there is now a little command hook above the roll to hang the paper clip on when not securing the toilet paper.)

I just squeeze the paper towel roll ( and TP roll ) so that it is oval. That provides enough resistance to keep them from unraveling. The holder is simple and light weight.
This one hasn't been squeezed.
