The microwave will eliminate your "Pantry" in the 21 Escape. It is a space that is as deep as the closet below it, and you can store your dry goods and some cookware that could have been stored where the oven is. The micro only needs 1/2 of that space, the rest is wasted on venting.
With an stove/oven, you can do what the microwave performs, heating up food.

My wife and daughters tell me that fresh baked chocolate chip cookies or brownies on a cold wet day while camping are worth any inconvenience.

I dunno, beer works for me.

I'll take the beer too.

If I want cookies, I will just bake them in the BBQ.

I've spent lots of days and nights (782 as of today) in my Escape 17B since April, 2011, I have to say I really miss an oven, and if my next trailer ever happens (a bed & table reversed 19) it will have one. Right now I'm trying to bake in a Dutch Oven. OK, but when dry camping a gas oven would be great!

Also for indoor baking when we had the Casita I loved my Omnia Oven: Omnia Stove Top Baking Oven
Although they have gotten expensive! Might want to save your pennies for that new 19!

When we first got the trailer, my daughter bought us a Coleman folding, stove-top oven. She was the first to use it and made some pretty decent chocolate chip cookies; however, it's a little heavy so we haven't used it since. Last trip out, I made cookies in our toaster oven, a cake in the CanCooker and used our little stove top grill (Stove Top Grill) for chicken, etc. Haven't really missed an oven at all (and I thought I would).

One alternative to the built-in oven, if you don't want to use the space in the trailer but have lots of cargo capacity in the tow vehicle, is a portable camp oven. The common brand seems to be the Camp Chef Deluxe Outdoor Oven (this one also serves as your outdoor stove). They're intended for outdoor use, which might be okay with many people. Unfortunately, they typically don't have a decent thermostat, or a thermostat at all.

My primary problem with RV propane-fueled ovens (aside from the obvious space/weight issue) is that they don't have igniters, which means getting down on the floor to light them... what a primitive pain in the neck.

We have had great luck with the Backpacker Oven, which folds small and weighs less than 2 pounds. Bemco Backpacker Ovens

We have tried it over a variety of heat sources with great success. We primarily use it on top of our Safari Chef (CADAC) Baked so far: biscuits, pizza, cake, muffins, coffee cake, casseroles, potatoes…

Wonder if that could probably go right over one of the burners on the inside stove as well. Sure would be less space consuming for a rare bake.

I don't know about these particular ovens, but I know the folding Coleman oven gets way to hot to want to use it inside.

The Coleman is nothing more than a folding metal box. There is no insulation, so if it's 350 degrees inside, it's 350 degrees outside, plus excess heat from the flame underneath.
I've used mine once since I got it. I'm carting around 7 lbs. for no good reason.

I wouldn't use it inside, but it is for boon docking. If it's that bad outside I don't want to do a lot of cooking inside anyway. Tried the Coleman and although this is also a folding metal box it is much lighter and it works great. If we have electricity we use the little Black and Decker toaster oven. We have done a lot of successful baking with it and offer it as an alternative with a high recommendation. Sure is nice to have fresh hot biscuits to go with the stew when off the grid!

We absolutely love our Camp Chef oven. It is used on every trip to make buns, biscuits, nachos, cakes, cookies, baked salmon, ham, etc. The burners on top are great and means we can cook everything outside in good weather and not have to mess up the trailer.

Didn't know the oven option from Escape was a manual light- but the stovetops are as well. The Camp Chef does have piezo ignition.
