Already got a bed picked out for when I order my 30-footer. (Microwave goes on the table to the right.)

Wonder how come there aren't any mini micro waves - like big enough for a bowl of soup or cereal ?

Microwave ovens designed to be built in and including a range hood are readily available, and I have one as original equipment in a trailer, but it is bulky compared to the small microwave typically used in a compact travel trailer.

I would consider a nylon ratchet strap or TV Grips, but not bungie cords which could easily stretch and let go over a severe bump.

Because they would cost almost as much to make and yet be much less useful to most buyers. There is a small (but not that small) low-powered microwave oven called the Wavebox - which can run on AC or 12V DC - but it has always been a niche product.

TV grips have wires inside the ribbon cable, and with any amount of flex they eventually break, as I have experienced.
