We use our tv quite a lot, mostly to watch movies in the evenings. However, I do not travel with the tv on the mount, but instead just bungie it to the top of the bed so that it doesn't bounce off during travel. It only takes just a few seconds to pop it back into its mount on the wall when we need to use the bed.

i have been bungieing mine still hung it is very secure to limit bounce /stress.

Yes, the walls are hollow but they're not devoid of framing that can support items. The trick is to find and use the solid framing and only attach light items on unsupported areas.
When I had my fridge out, (who hasn't ) I snapped a photo that makes it easy to find the framing for future mods.

I realize the photo was taken many years ago, but what is the thickness of the stud on the left side of the fridge? I’m trying to determine what length of screw can be safely used to install a TV mount.

Framing is 3/4" plus 1/8" panel.

Has anyone posted photos of the framing on the bath/dinette wall in the 19? I searched around quite a bit and couldn't find any. Also looked at the build photos that ETI sent and the bathroom was finished early. Should we assume that any places where a "stud" is found will be similar, 3/4" plus the 1/8" panel.

If you use a really strong magnet, just slide it around the panel until you find a colored staple ETI uses to attach the skin to the studs. About 1/8th inch crown width.

Yes. Except in places like the bulkhead at the end of the 19 counter that's finished on both sides so that'd be 1/8" + 3/4" + 1/8". In that situation I through bolt rather than use screws.
