I know your light set up is ideal, but are LED stick on lights a really undesirable option, or will they get the job done? I don't want to throw $$ into batteries if 12v outlets and wired lights are that much better, and get cheaper in comparison as you buy more batteries. I also don't want to put a 12v outlet in each cabinet though!

My Wilson amp will operate with both a 12V or 12V plug. I use a mag-mount antenna that when not in use attaches very strongly to the bumper then when I need it I place it on an 8" diameter disc that I can attach to the roof, or run it up on a longer pole, which has never seemed to make a difference.
We bought those stick on puck lights from Costco that use 3 AAA batteries and they seemed to go dead very quickly. The wired in lights are much better.
