Most any paint or varnish will act as a vapor barrier. There are specific paints formulated for that purpose and were, when I used one, latex based.

My rig is in storage, but I think the sink is vacuum formed of ABS plastic. If so, that plastic takes coatings very well.

Remove the sink and do a trial on the underside.

Time to unspool some duct tape

Some tape should keep the flap in place during transport, and can be removed during use. I'd suggest replacing the vent as I'm not sure it can be easily repaired.

My understanding:
Either a film placed over the fresh gelcoat or a coating of PVA (poly vinyl acetate) is needed to allow the gel coat to polymerize.
A sheet of film can be better as it can contour...

Big box & RV supply stores also sell an awning repair tape. I've not used any, but it's an alternative.

Do a word search for awning repair tape. There's lots of offerings.
