If you find a camera with a wide field of view and magnetic base, you could probably glue a metal disc to your folded tonneau cover and place the camera there for hooking up.

This is my hitching camera, from etrailer. I can attest that it is durable. I had it attached when I slammed the rear hatch and it dropped to the pavement. Still worked. Bit more expensive.
