The manual says to do it the way I was doing it, with the exception the speed should be between 32 - 40kmh. I did it at the high end of that range.
This is what the GM manual says:

Use the following to adjust Trailer
Gain for each towing condition:
1. Drive the vehicle with the trailer
attached on a level road
surface representative of the
towing condition and free of
traffic at about 32 to 40 km/h
(20 to 25 mph) and fully apply
the Manual Trailer Brake Apply
Lever.
Adjusting Trailer Gain at
speeds lower than 32 to
40 km/h (20 to 25 mph) may
result in an incorrect gain
setting.
2. Adjust the Trailer Gain, using
the Trailer Gain Adjustment
Buttons, to just below the point
of trailer wheel lock-up,
indicated by trailer wheel
squeal or tire smoke when a
trailer wheel locks.
Trailer wheel lock-up may not
occur if towing a heavily loaded
trailer. In this case, adjust the
Trailer Gain to the highest
allowable setting for the towing
condition.
3. Readjust Trailer Gain anytime
vehicle loading, trailer loading,
or road surface conditions
change or if trailer wheel
lock-up is noticed at any time
while towing.

Same camper and truck. Fully loaded set to 2.5 in town and usually 2.0 on highway.

Brake adjustment tool: I've owned several - this is the one I keep using. https://www.amazon.com/gp/product/B0...?ie=UTF8&psc=1

Now, how do you adjust the brakes:

I have the Canyon and use the built in controller. I have used the method in the manual to set it. I believe it is Currently set at 6. My trailer is second hand (5.0 single axle) so broken it when I got it. I have not locked the brakes. When set I do like to feel the trailer give a little clunk in the fifth wheel hitch indicating that the trailer brakes are slowing the trailer.

We picked up our new escape 19 from Chilliwack. The brake controller was set too much brake. what I do is get the trailer hooked up on a slight downward grade. Then roll ahead slowlly and press the brake controller until I get the correct brake on the trailer.
