I have not, but many have. Bruce H in FiberglassRV (another RV Life forum, with overlapping interests and many common members with EscapeForum) has an interesting and relevant rig:

While his lead trailer is not an Escape or a fifth-wheel, what he has done for stability is interesting (and I believe valid). He has described his approach several times, including in Casita swaying - post #47. He has extended the small trailer's tongue and coupled it under the lead trailer, forward of the bumper. These changes are related, and both increase stability.

While much discussion of this sort of towing configuration is about 5.0TA rear hitch load capacity - and that is something to check - I don't think that's the major concern with such a light trailer. Stability seems to me to be a much greater issue.

Not long ago a new member towed a small trailer behind his new 5.0 and experienced some difficulty towing, porpoising a if I remember sway. I don’t believe any of that happened after he removed 2nd trailer.

I live in Montana, where it is legal. I have an Escape 19 with Anderson hitch, tow with a Ram 1500. I have my escape set up with the hitch on the back of the trailer, and use it to occasionally tow my 14ft jon boat. When I arrive, I find a place to unhitch the boat, go get the RV trailer unhitched, and then launch the boat. It has towed just fine doing this. There is no way to back up in this situation. I always use the Anderson hitch when doing this.
