Yes, the trailer's GVW is the weight of the trailer only.

You can, but parking the trailer on the scale and unhitching may not be practical.

The easiest approach, which doesn't involve unhitching on what may be a busy scale, is to
- take the whole rig (truck with trailer) through the scale,
- then park the trailer out of the way and take just the truck through the scale.
- The difference in truck+trailer and truck-only weights will be the gross vehicle weight of the entire trailer with contents.
From the same set of scale readings, assuming you get separate numbers for each axle or at least for the truck's axles from the trailer's axles, you can subtract the weight of the truck alone from the weight on the truck's axles while the trailer is attached to get the pin weight.
