Does a simple 17A need any winterizing?
Our 17A is as simple as you could get. The only plumbing is from campsite water hookup to kitchen sink, fresh water tank to kitchen sink, and from sink to grey water tank. Not even a hot water heater. Is there anything in all that, once emptied, that would be damaged by the cold?
We’re in Gardening Zone 8 so not super cold. Also we plan to use the Escape about monthly through the whole winter.

I'd recommend you take your olive oil into the house if temps dive. Run your pump for about 30 seconds to clear it after you drain the fresh water. Other than that, I'd say you're good to go.

Awesome, thank you! And I love the olive oil bit. Maybe the Dr. Bronner's soap too ;-)

The oil gets cloudy if it freezes, but you can heat the container in hot water and it will clear.

Wait a minute, I'd pour some RV antifreeze into the sink drain to protect the "P - trap" , and over flow would protect your gray water drain valve should fresh water accumulate there.
I'd also put some air pressure on the city water inlet to blow out the line to the sink valve.
Given your location, freezing not likely but a half gallon of RV antifreeze doesn't cost enough to justify the agravation.

Yup. Good catch. And press on the back flow valve that's behind the screen at the city water inlet. That will drain about a half ounce of water that could wreck the inlet if frozen.

Even though you don't have a bathroom, there are is a waterline between the fresh water hookup and the kitchen sink. THAT needs to be winterized. Don't forget the water pump, if you've used that. Anti-freeze down the trap and the fresh water tank empty.
You can use your trailer even if it's winterized. Just use Jug water. Not as convenient as a pressurized water system, but not all that bad either. Taking simple precautions is far better than fixing busted plumbing.

No, my 15A was as simple as you can get. No sink at all. So now I have to learn about winterizing. I used to lose pipes in my cabin here every winter despite draining the lines (I wish I'd known about blowing those out!)

Thank you for the very specific detail. This is what I was wondering about.
