In my opinion the EMS is a must to protect your electrical system and components. Most other options come down to personal preference and intended camping style. Another option would be to just have the benches raised 3", still keeping a level floor.

My feet never reach the floor most any chair or toilet always uncomfortable to have your feet dangling- but I'm under 5'2" I'm kinda used to it!
