2020 Escape 19 $33,000 located in Western WA

I love my Escape, but have to leave RVing behind. If you are new to RVing, this may be a great option since so many extras are thrown in.

The Escape 19 has solar (2-190w panels plus zamp port), extra insulation (spray foam plus tank heating pads), E2 Fastway Sway and Weight Distribution hitch, cot, and cushion covers made of marine-grade fabric from Sailrite. You can install a conventional RV toilet if you want (black tank never used), but this does include a new, never used airhead composting toilet (Retail: $1095) ready for installation (there is a 12V drop for fan). Build sheet is posted below.

Extras include VIAR 450P Compressor Kit with winterizing kit (Retail: $365), Proven Industries trailer coupler lock (Retail: $235), Dometic CFX28 portable refrigerator/freezer (Retail: $899), 50-ft extension electrical cord (Retail: $100), X-chock wheel stabilizers (Retail: $70) plus miscellaneous items including 2 sets of lynx leveler blocks, torque wrench, misc. chocks, hoses, etc.

When customizing my Escape, I focused on boondocking. I opted to not install a water heater or shower. I’ve lived off the grid many years and learned the best way to conserve water and fuel is to just heat what you need. I never missed either and appreciated the extra space in the bench and shower stall. There’s a custom cut-out for a marine-grade Nova Kool R3800 series AC/DC refrigerator. Because of delays during COVID, I bought the Dometic portable refrigerator/freezer. I also used the Dometic for truck camping when my Escape was parked so never felt the need to get the refrigerator. For flexibility, I also chose to have two dinettes with an extra cushion to create a u-shaped couch in the back. Recently, I've used the front dinette as a single bed. I made a few other modifications that that can be seen in the pictures posted below.

Maintenance completed in Fall, 2022 included furnace check/cleaning, wheel bearings packed, newly installed Suburban stove top (due to recall).

I'm wondering what the clearance is between the cot and the benches set up in conventional fashion with cushions (as standard setup, not your custom bed there). Would it be possible to use this as a bunk bed type of setup?

I have seen pictures on the forum that show there's not much clearance. I just measured about 20" to bracket (I don't have the cot set-up), but the cot is canvas/fabric so dips from weight (though it's pretty stiff). Little kids may be okay with it. I think I saw some one mention their grand kids used it this way.
