Have you run the fridge on DC previously? DC is only good for a short time, will deplete your batteries in several hours and can't power the fridge to full cooling, it is really just for short term use. If your fridge is running OK on propane, that's normally what you would do without shore power. If your lights and other 12V things are working, everything may be OK but your batteries may not have a sufficient charge to kick in when you try and switch the fridge to DC. Your solar controller should indicate the current battery voltage, it's a better gauge of battery condition than the monitor that's part of the holding tank monitor panel.
