I did add the probe. There's a picture of the plug back on like page two of this thread. Pull the plug and you'll see insulation. Nothing but insulation until you hit the foil on the fridge's exterior. Just used a sharp stick and poked the whole way thru. Some slight resistance at the foil but that's it.

Nothing to exciting but here's a couple of pics. I originally was going to just caulk the holes/wires, but had a hard time getting a clean form around the drooping wire and so I printed up some hollow cones that I filled with caulk to help with things. Also was going to just zip tie the probe to a rack, but then didn't like the idea of it getting moved around or having warm things sat on top of it, and so I put it on the back wall close to the main thermostat. Probably a better idea.

Edit. And I went camping and the fridge still works fine.
