I’ll second Karchner Caverns, it is an amazing story and well preserved cavern. While you’re around there, Gila Cliff Dwellings is cool, there WAS a little private CG on the long one way road in, and Chiricahua NM at the Bonita campground, you’ll fit, I did in our 5.0 and the hikes are great!

My greatest open question is to get to and from SLC to something close to Albuquerque without too much winter weather issues (going mid-December and returning late December). This will be the first time with Escape in winter. So, both the driving in winter as well as the spots to de-winterization (going South) and re-winterizing (returning) spot/area suggestions would be highly appreciated.
It is clear that some of this will need to be flexible but I like to have a plan!
I concur, in fact, we got caught at Lost Dutchman SP in AZ one year in the teens overnight. The rangers told everyone to unhook water and that 1/2” of foam inside that shell got a little nippy, but we have the underneath spray foam and weathered it OK. We did buy an “emergency” electric blanket after that though! That park and Picacho Peak are others on your southern route…the Tucson Desert Museum is a must stop, especially the hummingbird aviary (hint, have something red in your pocket and a camera ready when your hand brings it out, mine was a tube of Carmex with a bright red top!)
We are not worried about ourselves freezing (our sleeping bags were good enough in 0-10F at EBC in December). It is the Escape freezing that worries us We do have the spray foam, so that should help a bit.

As long as you are using the heater you should be fine........
