Chilliwack fish? Don't be talking fish unless you've been to Emily, Minn.

Wow! I have seen a couple large sturgeon, but nowhere near that size. Pretty incredible.

I’ve watched the guys fish for big sturgeon below the Bonneville dam. It’s quite a process. The big river sturgeon we have here don’t get that big and they are rare but people get one once in a while. However a sturgeon called the sand sturgeon are plentiful and caught in numbers in the spring especially. They are mostly in the 3 pound range. Most people don’t keep them for the meat. However they can be caught on trot lines and in the last few years they have suffered depredation from commercial people who kill them for the eggs as their caviar which is very close in taste to European caviar which has been severely depleted in some areas. I’ve caught a few, never killed one, just throw them back. The roe from suckers and redhorse as well as the meat are prized by about one percent of Iowa fisherman who have a minimum age of about 70. Try getting a millennial to fry up sucker eggs in butter and make a sandwich with some rye bread and a little hot mustard. Shorthead redhorse fight like crazy.
