Isolation cooking

Although unable to cook on the Blackthorn griddle, I can still whip up a meal on a cast iron griddle on the stove. Made breakfast today with bacon and onions cooked and then used the residual grease for the hash browns and grilled corn and flour tortillas and finished with cheese omelet topped with salsa. The Spam was not needed.....enjoy

That's beautiful. I did not know you were out. Is this in your driveway?

I wonder if I should get a small cast iron skillet. Mine is 17 inches.

The only think I do not see is poutine. Or is that for the afternoon?

I'm in my house, the entire country is in isolation....no poutine, maybe in Niagara Falls in September. I do have an unopened can of Spam....

Last night we made homemade chicken enchiladas in a green chili cream sauce and then broiled it (kinda hard).

I can get the kids to come home for this one. When we're not in lock down.

Not the greatest pic but I was hungry.

Isolation makes the heart grow fonder, but it tends to ferment my sense of humor. Meanwhile, not that a single soul should be interested in my pitiful cooking skills, I'm downgrading my dinner plans to a BLT w/cheese.

All of it looks yummy. Uncle Tim, could you share the cream sauce recipe? Thanks.

My daughter and two granddaughters (14 and 12) escaped from the Bay Area "shelter in place" last Monday afternoon and arrived with a ton of food. My home is quite isolated, and they were likely safer here for the while.

We have eaten like royalty--they just left and left me well stocked--and I had quite a bit before they arrived. I made 14 quarts of soup, some is frozen and they took a big container home.

It was a great diversion to have the girls here, even when they bickered, and i felt quite maudlin when they left just a bit ago. Back to solitary confinement, and cooking for one.

Sure here it is.



You can modify this one quite a bit too. I always use homemade chicken broth in it.


I use 505 sauce in addition to roasting my own chilies.

Very yummy !! Not so special here - our today's dinner is pretty basic meatloaf, potatoes, red cabbage with gravy...... but I did make a wee lemon cake for our mid-morning coffee.

Monday's bagel and cream cheese with cherry preserves. Found out that when you toast one side of the bagel, it should be room temperature, otherwise you have a cold on one side and toast on the other when toasting bagels keep in the refrigerator......

Hi: cpaharley2008... Glad our toaster has a bagel setting. Push that button and put the bagels in facing each other and VOILA... toasted on one side only. Love the Breville... but first you need "Bagels"!!! Alf
