I understand the logic, but the wheel must be off-centre to be a caster (so it automatically turns the way it needs to). The alternative would require you to manually steer it.
I don't think that handling the load without bending should be an issue. Yes, the Atwood catalog shows that a jack which normally has a few thousand pounds of capacity is limited to 1000 pounds with the wheel... but who has a 1000 pound tongue weight with an Escape? I doubt it is a problem, and would go with the jack manufacturer's capacity rating. Also, if a plain foot is used for long-term storage, it would help if this is a concern.

Although most jack legs and their feet/wheels are similar, they do need to actually match. Fortunately, it seems that in most cases the match is available. If I were to use a wheel, I would want it quickly interchangeable with a lower-profile plain foot.
