As a secondary use some guys use these to shoot their wheel hubs on long hauls to check for overheating.

I third that. Keep the IR thermometer handy during towing. You do have to remember to pull the hub covers on trips you want to get good hub readings on.

What warning signs do you look for? Are there specific temperatures?

I have always checked tires and hubs during gas stops. I just use my hand, but I'm looking for differences in temperature between them.
Especially when crossing the Mojave Desert in 100-110° heat, everything is warm, but the problems will be extra hot. No problems in 5 years with our Escape. Had a tent trailer problem in Utah at 105° on I-15. Changed out to the trailer spare. When we got to Zion NP, I took the hot change-out to town. Replaced the soon to blow tire.
