Determining CCC
To determine the cargo capacity of a trailer, would you just subtract the dry weight from the GVWR? For example, using the specs for the latest 5.0, would the CCC for this trailer be 1,615 lbs?
Total Dry W 3885 lbs
GVWR 5500 lbs

Yes, BUT: You have to use the actual dry weight of your particular trailer, since any options you might add will increase the dry weight and reduce the cargo capacity by the same amount. That said, I don't have the impression that many people have too little payload capacity on Escape trailers. In our case, loaded for travel, we are 3-400 lbs below GVWR even considering that we generally travel with the fresh water tank full.

Dry weight is the weight of a trailer without options, not the delivered weight. Manufacturers have to start somewhere and where they start is the weight of a base trailer without fluids or options.
Some have suggested that manufacturers are fudging the numbers because the dry weight indicated is lower than actual weight of trailers at delivery, but they are not fudging. They are simply using a base.

NO Dry weight is a weight of a trailer without LIQUIDS (IE water, black, grey and sometimes propane, often assumed to be not loaded for use weight). Dry weight as delivered is subject to added options and yes is typically heavier than the dry weight listed on the ETI website. Wet weight is a function of the fullness of the tanks available and is therefore a quantifiable number for any camper (a full fresh water tank always has the same weight for the same size tank). Ready to camp weight(my term) can vary considerably....some people like cast iron to cook with and some don't cook at all....or teetotalers (not super likely) vs Joe beergut who brings 12 cases for the weekend.
If you are looking for the weight of YOUR present or future trailer you need to decide whether you travel with empty, partial or full tanks and how much stuff YOU need to bring. The best thing to do is look at Jon Vermilye's real world trailer weights spreadsheet and decide where you are on the spectrum...or if you own it already and are really concerned …. get it weighed (and give the numbers to Jon so others can glean some knowledge)

Gutters, they look nice, don’t weigh much, are easy to install and best of all they work well. Recognize that in Johns chart of 21s a couple of tongue weights are from empty trailers
as a starting point. Not that this is at all wrong but changes the tongue weight average if added in. Seems to me a typical tongue weight on the 21s is pretty close to 500 lbs in many cases. As previously noted, water in the fresh tank will lessen this number but add to the towed weight. Judicious loading of the front storage box can make a difference too.
