Fin's Pancakes
Some folks asked about the pancake recipe, so here it is....
(this makes enough for 4 to full to fill up with)
1 cup of flour (you can sub half for whole wheat if desired)
1/8 cup of oats or coconut or combination
1 tsp salt
3 tsp baking powder
3 tbsp sugar
Mix all dry ingredients well. In a seperate bowl mix the following...
1 egg
1 cup of milk (I use almond milk, but soy also works well)
1 tbsp vanilla
3 tbsp canola oil
Mix wet ingredients then add to dry. The batter should be rather thick, so it drips in blobs off the spoon.
Let it sit for about 10-15 minutes until bubbles form in the batter (you'll see them at the top).
Cook on medium heat until golden brown. Enjoy with toppings, coffee, and friends.
