Dan, the bed in the 19 is permanent and at the rear. Adding the u-shaped dinette option just turns the bench seating in the front to u-shaped seating.
Now, you "can" ask Escape to reverse the floor plan for an additional cost, which means there is a larger dinette in the rear (either regular or u-shaped), and a smaller permanent bed in front. I suppose that works well for a solo traveler, but for us it's definitely a non starter. The queen bed was our primary reason for choosing the 19, and we aren't giving that up.
There is a third option as well, which is to nix the permanent bed in the rear in favor of a dinette, and to keep the dinette in the front as well. You'd have to convert the dinette into a bed each night, and it would also mean sleeping on the upholstery cushions instead of a mattress. Again, not a choice we'd make. Side note: And, now that we've swapped out the stock mattress for a gel memory foam one, we find the queen bed even more comfortable and indispensable.
