I did my Hepvo vertical because it would not work horizontal. Can't really get any more room.

It is looking great!
Every time I look in the cabinet I think I could come up with at least 20% more usable storage if it had been measured and built to closer tolerances. The wasted space on top and in front of the wheel wells is huge...in my opinion.
Plus the two little drawers in our 19 could easily be wider and longer using that dead space behind them.

An easy fix, go for it.
Mind you, having done so myself I can't seem to fill all that space, and when I come close the trailer weighs more. Mind you, a lot of that extra weight is from building more into the cabinetry. A Catch 22 situation.

Full extension drawer slides and all those drawer carcasses can add-up, can't it.
As I'm sure you know some hardware and materials / techniques can be a bit lighter than others, but that can be a Catch 22, too, if not careful about robust-ness.
Still, a fair tradeoff for much easier day-to-day access to things, even if not packed-full, IMO. I really dislike having to get on my olde hands and creaky knees to get something from the back of a lower cabinet, even if only occasionally. And fortunately our kitchens are central over the axles, so the greater weight of cabinets and, contents if inclined to jam 'em, is reasonably well distributed in the bigger picture.

Got the top over the oven cut out. Rounded over the the front and side face. I am thinking wormy maple with a cove at the top and decorative inlays for the back splash. The sink template is where the sink is planned to go.

Drawer boxes
Installed drawer boxes today. The top is ready to fasten down. All that is left to do is drawer fronts, cabinet door, and back splash.

I really like your choice of drawers rather than doors for those lowest spaces, even if it means sacrificing access to every little nook and cranny around the wheel wells

I always use through dovetails. Cut drawer parts to size cut tail boards, then cut pin. Boards. Exterior size stays the same.

Shoulder surgery stopped my progress on the escape. I will camp with out a back splash and sink cabinet door. Everything else is functional.
