Insofar as you first statement I agree on both counts. As to the questions, some further original research effort on your part is likely required ...
- From the Dickinson website, here's the Caribbean dimension data.
- If you ask ETI for their range model option(s) you can get the same from that mfr's website for comparison, here's a typical example (scroll down the page) note that the typical option from ETI is a 17" range.
- Review of the It's Friday! - 2017 and beyond! (build-pic thread) will reveal pics of Escape cabinet framing details (suggest starting with the latest and working back). That thread is a tremendous resource for Escape construction details, but yes, patient diligence is required to harvest its fruits.
- IMO worth noting that insofar as the vertical dimensions (and associated horizontal cabinet framing), that seems to be common for all Escape model kitchen cabinets with a range option installed (kitchen cabinets are the same height in all models).
- Methinks when you put all the resources together you'll find that, if you want to install the Caribbean more-or-less flush with the existing countertop, modification of the horizontal cabinet framing below the range cutout will be required (and that bears on the cabinet door cutout below the range). But, you may come to a different conclusion.
- Only you can decide if the effort is worth your while or within your capabilities, the definition of "major cabinet rework" is in the eyes of the beholder, IMO.
I realize you may have already found some of those resources, but perhaps not all (that's suggested by your inquiry, please accept my apology if I misconstrued).
