I met Rubicon during the summer and saw his mini-split mod. It's top notch. He should go into the business...
I've shown my 2020 5.0 as part of the ambassador program 7/8 times, and as part of my "what would I do different?" dialog, I tell people to get AC wiring, and get a heat pump AC unit installed later. It beats the B52 that Escape mounts on the roof.
Or get in touch with Rubicon and see if he will install a mini-split...

Tegarding the stove replacement:
1- does the stove require an additional regulator and or hose at the stove connection?’i
2- there is an back “lip” that looks like it holds the pot holders that are essential on a boat, but not on an Rv. Can you take the “lip”off so that the stove is essentially flush with the counter.??
3-did you install the cutting board lid  If you did, is it flush with the counter ?

The Dickinson cooktop does not require an additional regulator. I was able to modify my existing gas line to work with the Dickinson but this is on a 19 with the removal of an Atwood DV20. You'll need to size up your situation. Worst case you will need to remove the line from underneath the trailer and run new.
Yes, there is a pot holder rail and pot holders that comes with the Dickinson that you simply do not use in the RV application. When you put the cutting board lid on it is almost perfectly flush with the counter with the exception of the very thin lip all the way around where the cooktop engages the counter for support.

Spare water pump doubles as a water transfer pump. Have been using this for awhile now but figured I'd document it for others

I wired an SAE quick release adapter I had laying around onto the pump and then plugged this in as an extension to exterior 12V outlet I previously installed. Since there is no switch this is convenient if you want to stop the pump without having to go all the way over to the 12V receptacle.

Use the two 1/2" NPT to 3/4" GHT double female adapters to mate up garden hoses on inlet and outlet sides of Shurflo pump

Bought two. Cut off the female end off one so it fits easily into the onboard tank fill inlet
Fittings are lead-free and Flexilla hose is drinking water safe. If onboard pump were to fail this can be easily stripped down and installed in trailer as a replacement.
