Those are crimp fittings on PEX tubing in your Escape plumbing. You could search the Escape forum and find discussions of PEX plumbing repairs.
You will want to cut out the leaking elbow and some PEX tubing, and splice in new PEX tubing and fittings.
You will need a PEX crimp tool, you can likely rent or buy one from Home Depot, and some PEX tubing, and crimp fittings. Even if you have to buy the tool, its cheaper than paying for an RV repair.
I am a bit chicken trying new repair techniques on my trailer, but I fixed a slow leak under my kitchen sink on my last trip.
Try a few test crimps to see how much elbow room you need, then plan the sequence of your crimps to make sure you have enough elbow room for your last crimp joint. I had to remove the sink to get all my crimps done.
