We have been camping in cooler weather so the windows have been kept mostly closed. Now we are noticing a smell that kinda seems like garbage. We have no garbage in the trailer so unsure what the smell is. Does not smell like a dead mouse. Does not smell like sewage. I don't think it smells like gas, but unsure.

I would check to see if your nuts have backed off behind your two stove knobs allowing the knobs to appear loose. If this is the case then you may have cracked a propane supply tube under the stove. The smell may be stronger under the stove as well but don’t test the stove by lightning it again until you have determined your stove is OK. If loose you will be checking for cracks where the red arrows point. The second picture only is to show you the nuts in question. If you smell gas it is to late to fix the the stove.
There has been a few people that have been badly burnt by Escape stoves blowing up but Escape refuse to send out any information on the subject.

Use some Odorlos in the grey tank. Pour down the kitchen sink.
I agree with some tank treatment. If you are happen to be running the MaxxFan with all windows shut tight you will put the trailer under a negative pressure. You can get some funny odors when that happens as the air has to come from somewhere and the shallow traps and toilet do not have perfect seals.
I put this stuff down the kitchen, shower, and bath sink traps, and make sure I close the drains before traveling.
if your kitchen sink has a U trap, its quite likely a road trip will splash all the water out of the U trap, so when you get there, pour in a few more ounces after running the hot and cold water at the kitchen sink to get any air out of the system (and before turning on the hot water heater!).
