Isolation cooking

1 cup of flour.
1 cup of milk.
1 teaspoon of salt.
One egg.
Mix dry ingredients in a Ziplock, add egg and milk and mush around. Refrigerate until soup at a boil. Cut a corner off the Ziplock and sqeeze out dough, cutting off chunks with a butter knife ( dipping it occasionally in the soup helps ). The dumplings will sink, then rise to the top when cooked.

Eggs keep a long time. Put them in the refrigerator they will be fine. We used to buy a 30 dozen case at the egg buying station about a week before Thanksgiving. We kept them against the north wall in the unheated upstairs. We would eat the last ones about the first of April. Never had a bad one. I put 5 dozen in our refrigerator about two weeks ago. They were
$.99 a dozen. Still have three dozen. I have two or three for breakfast one time per week. Most go for cooking. My Cholesterol is 117 down from about 230 years ago so I don’t worry about that. Iowa is right at the top in egg production in the USA. It ain’t like when grandma had a few layers with nests all over the place. Remember those wire egg baskets. Do put all your eggs in just one.

Thanks Dave we know they'll keep but Beth is getting a lot of mileage out of the story of our Costco stop when talking to friends and family:)

BTW we certainly thought about you and Rita and would loved to have stopped last Wed. as we made our dinner at the rest stop just south of Cedar Rapids, however this is NOT the time for visiting. Hopefully see you at Niagara and/or Miss. Rendezvous.

fireball

I always thought your needed a special license to cross state lines with Fireball...........:)

It is illegal to transport this product unless you have a valid Wisconsin Camping License. I am a vendor for these licenses and keep a tear off pad of these licenses in the glovebox along with my rubber gloves.

Hi Adrian
I stopped at that rest stop a few weeks ago to get some state park and Iowa bike trails maps so I’d have them to promote Iowa Tourism this season. They were out so I went over to the DOT office about two miles away and made a new girlfriend who took care of me. Keep
Calm and Carry On.

Tonites meal, roasted garlic italian bread with cup of homemade chicken noodle soup. It never got higher than 45 and it was a drizzle almost all day. The dogs are going stir crazy being cooped up inside, but the yard is a mud bath until the grass comes in....

Sure here it is.
You can modify this one quite a bit too. I always use homemade chicken broth in it.
I use 505 sauce in addition to roasting my own chilies.

Hey! That's my family's chicken enchilada recipe too! It's a favorite for sure. Maybe we're related!

Maybe you guys will like this one.

Bruschetta
Baguette (pick your favorite, this one is multi grain)
Buffalo Mozzarella cheese (costco, the best one)
Roma tomatoes
Basil (fresh)

Drench in fine quality olive oil, season as you like.
Heat at 375 for 5-10 minutes.
Then broil on high for however minutes you like (melt it your way).

Everyone loves this one. Particularly my wife.

We are limiting our grocery shopping to one short trip per week
Our local small town grocer ( Pop 757) can’t keep Spam on his shelf
Spam helped win WW2 and it’s doing its part again - feeding a hungry nation.
If Jim can control his compulsion to hoard Spam we will all get through this crisis

We are a lot closer to the factory source and the SPAM museum than those east coast boys and the Canadians. I can be at the packing plant in less than four hours. I’ll dig out an old union window decal and a hat button from my membership in the Amalgamated Meatcutters and Butcher Workmen of the World AFL-CIO and when I hit town I’ll organize a social distancing SPAM brigade to load my Highlander and utility trailer which will haul about a ton. A little cash and a couple cases of beer and I’ll be good to go. Gotta have a plan.

I inherited a chopping device from my mom which does a nice job with potatoes & onions. I cooked up a plate of home made hash browns and onions with sliced ham. Added 2 eggs and some cheese and salsa, lunch time served on tortillas.

Thanks for the idea, Glenn! :thumb: I'm saving your easy-to-do recipe for when I'm out on the road again, substituting gluten-free flour due to celiac disease. I've never made dumplings that included eggs, but it's an easy way to add protein to broth and a few veggies for a simple meal. Because I like well-seasoned dumplings, I'll likely add dried onion and garlic powder to the mix - or perhaps use poultry seasoning, as my mother did. Brings back happy memories!:)

Jim , you are one amazing individual, how you stay so fit and trim baffles me .
I just look at your pictures and I gain a couple of pounds

You are what you eat, or is that drink? either way, it shows. I do have to watch my weight, but I'm bored and stuck inside.
