We also want to put in a good word for “Smart Tiles” and love our backsplash
I did my own custom backsplash and attached to the wood strip Escape attaches to the shell. Do they not even install this? If not, it would be a good build request.
The first is a shot of the backing for tile use screwed on. You can see the tile edge too. The second is the final product using stainless steel tiles.

I have maple in my 32 year old Scamp. Oak in Ten Forward. About the only thing I can tell you, IMHO if you keep your trailer long enough, you'll get tired of the wood... doesn't matter maple or oak. After a dozen years, I was thinking about painting all the maple in my Scamp. At that point the trailer was 24 years old and the maple had darkened significantly. I figure I've got about 7 more years before the oak starts driving me crazy in Ten Forward.
Choose wisely.

Just remember Jim B.unit already had a factory back splash and it was removed and replaced. So the backing was already there from the factory. Your units will not have any backing, just vinyl all the way to the counter top.
