The center of my tires are more worn than the edges. What does this signify?

A lot of folks run about that. I like to run a little lower, more towards 45 psi.

I say "more towards" because if I take 5 of my assorted gages I probably get a 5 psi difference. :)

You might want to check your tire gage against a couple of others.

Well 2 different gauges read the same at 50psi.
So I don’t know how to account for the wear.
What do the tires say for recommended PSI? I usually go 5psi under max.

You could always do the "chalk test". That will tell you if you are over or under inflated.

Escape recommends 50 PSI on all trailers, AFAIK. the max pressure on the tire is for that tires maximum load, if you have a load range "E" tire its going to be a LOT higher than a "C" tire. My Load Range "D" Goodyear Endurances say max 65 PSI, for a 2150 lb load per tire, or 4300 per side, 8600 per trailer.
