Don't the bolt holes form an equilateral triangle, so that you could mount it with any of the bolt holes facing forward? Then it could face 120° around from forward in either direction. (Just not 90°).
As long as there's nothing else on the inside preventing the head from rotating, yes. Don't know, as I've never had it apart.

Haven't checked, but it wouldn't gain you much clearance. The sides of the motor housing stick out about as much as the front does. Now if it was mounted backwards? That would gain you a few inches.

I agree that I would only gain about an inch. But I though that would help along with a longer stinger.

Yes, I think so, but if the jack head protrudes far enough forward to be a problem, it will likely interfere with the propane tank cover when rotated 1/3 of a turn. If it clears, then this is a good option. :)

I didn't measure the hole pattern, but it does appear to be an equilateral triangle. If I turn it 120 degrees, I will have an interference with the propane tank cover.

Ah, good point. The back of the Atwood is vertical, and comes right up against the tank cover. If it was rotated and protruded at all, removing the tank cover would be a problem. Thanks for the insight.

I already had problems with the placement of the tank cover, storage box and electric tongue jack. With the tank cover in place, I couldn't open the the storage box. Ended up carving out a small opening at the back of the tank cover and it works fine now, and don't think it makes much difference with the propane tanks inside. The Atwood tongue jack doesn't appear as if it could be rotated, and it wouldn't make much difference anyway, since it's pretty much the same size all the way around. Will just learn to live with the longer stinger bar...until I need to buy another truck.
 
It's the same issue with my F150 Bob. The tailgate is too tall to clear the jack. I haven't changed over to an extended stinger yet, mainly because it will require moving my Anderson hitch setup as well. For me it's not a biggie though. I can lower the tailgate halfway and just rest the top edge (its plastic so no damage) on the jack post if I need to access the bed while hooked up.

For those that clear the manual post but not the jack handle, I found a manual jack with a removable handle that can allow access while hooked up. ETrailer sells them.

I didn't rotate the jack at the base where it attaches to the frame but at the head/motor drive unit. Also as mentioned this was on a friends Lippert power jack.
There were predrilled holes that only required taping to allow for the 90 degree rotation of the jack.
I was just tossing it out there, I haven't looked at any of the Escape set ups as I have a 5.0TA.

Is there any reason for having the propane tank cover other than esthetics?
Beside aesthetics, the cover keeps the tanks clean during travel. It's also an added layer of inconvenience for thieves, who seem to be an increasing population in transient-rich Santa Cruz. I also have the tanks chained together to the safety chains, under the cover.
